Corned Beef and Cabbage

This dish is traditionally served on St. Patrick's Day - March 17th.

What to get?

2-3 pound corned beef brisket (with pickling spice packet) 1 Bay leaf 5-7 medium sized new (red skin) potatoes 4-6 medium sized carrots - ends trimmed and peeled 1 red onion - peeled and cut into quarters 1 large head of cabbage cut into quarters

Directions:

1. Trim extra fat from meat. Place in a Dutch oven or large pot adding the spice packet and bay leaf. Add water enough to cover meat. On high heat bring to boiling, cover then simmer for 2 hrs. or until meat is near tender.

2. Add potatoes, carrots, and onion, bringing pot to boil, then reduce heat and continue simmering for about 10 minutes or until the veggies are fork tender.

3. Lastly, add cabbage and cook another 10 minutes or until tender.

4. Discard Bay leaf, spoon up vegetables in a serving bowl, slice meat along the grain.

5. Serve with dijon mustard or horseradish.

Carrot and Cucumber Slaw

This simple dish can be a colorful side dish for a spring dinner and even on St. Patrick's Day as a cool alternative to the cooked carrots in the Corned Beef dish.

What to get?

6 large carrots - trimmed and peeled 2 large hot house cucumbers trimmed and peeled 1/4 small red onion peeled 1/3 C. rice vinegar 1 Tbsp. Olive oil or Canola Oil Fresh ground pepper

Directions:

Using the grater blade of a food processor, grate carrots, cucumber, and red onion. Place in a medium serving bowl, add the rice vinegar, oil, and toss liberally until well mixed to create a marinade effect.

Finish with fresh ground pepper and serve.

Black and Tan - made with hard apple cider

This hearty drink has become popular in America originating sometime ago in England. It is made with Guinness Stout and layered giving the "Black and Tan" effect. Typically this drink is made with an amber beer and Guinness. This special recipe with the hard cider smoothes out the bitter taste of Guinness with a little hard apple Cider. Enjoy this drink for St. Patrick's Day!

What to get?

Guinness Stout (available at most grocery and liquor stores) Hornsby's Amber Hard Apple Cider (available at BevMo)

Directions:

Pour in enough hard cider to fill your tall beer glass half full. Next take a spoon and turn it upside down and lay it across the top of the glass. Slowly pour the Guinness over the spoon filling to the top. This will ensure a layered Black an Tan affect.
